Quarter, Half, or Whole: How a Beef Share Works

    Back to Journal

A beef share is exactly what it sounds like: you buy a portion of a whole animal, and we take it to a USDA processor who cuts, wraps, and freezes it to your specification.

    What each share yields

  1. **Quarter (about 100 lbs of packaged beef)**: fits a mid-size chest freezer half full; feeds a couple for a year or a family for six months
  2. **Half (about 200 lbs)**: fills a mid-size chest freezer; feeds a family of four for a year
  3. **Whole (about 400 lbs)**: dedicated freezer required; splits well between two households
  4. What is in it

Every share includes a proportional mix of steaks, roasts, ground beef, stew meat, short ribs, and organ meats if you want them. You get a cut sheet to customize.

    Freezer requirements

A quarter needs about 4 to 5 cubic feet. A half needs 7 to 9. A whole needs 15 to 20. A small chest freezer runs about $200 and pays for itself in a share.

    Pricing structure

Shares are priced by hanging weight, not final packaged weight. Hanging weight is roughly 60 percent of live weight, and takeaway weight is roughly 60 to 70 percent of hanging weight. Processing is billed separately by the butcher.
