Grass-finished
Pasture, hay, forage. Never grain. Never soy. Never hormones.
24 to 30 months
Twice the time of feedlot beef, and you can taste the difference.
Dry-aged
Minimum 21 days in a controlled cooler. Deeper, nuttier, buttery.
Quarter, half, whole
Cut and wrapped to your spec by a USDA processor near us.
How a beef share works
- Quarter (about 100 lbs). Fits a mid-size chest freezer half full. Couple for a year.
- Half (about 200 lbs). Fills a mid-size chest freezer. Family for a year.
- Whole (about 400 lbs). Dedicated freezer required. Splits well between two households.
Priced by hanging weight. Processing billed separately by the butcher.
Where we are today
Twenty acres cleared and seeded. Fence going in this year. A small starter herd of Angus and Angus-cross animals arriving in the spring, sourced from a Pennsylvania cow-calf operation we trust.
Grass-finishing takes 24 to 30 months. First shares are targeted for winter 2027 through spring 2028.
