About this product
The Backyard Bundle is our starter freezer pack: about six pounds of heritage Berkshire and Blue Butt pork from Bryant Creek Heights in Conway, Pennsylvania. Seventy-nine dollars. Includes two pork chops, ground pork, thick-cut bacon, and sausage patties. Everything is USDA-processed, vacuum-sealed, and frozen. It is sized for a smaller household, or for anyone who wants to try our pork across a few different cuts before stepping up to a bigger bundle.
Why bundles exist: on a small farm, no cut leaves the property unless every cut has a customer. Whole-hog butchering produces chops, ground, ribs, shoulders, bellies, and everything in between, in the ratios the animal grew them. Bundling is how we honor the whole animal without wasting the parts that would otherwise sit in a freezer waiting for someone specific to order them. It also keeps prices honest, because we are not marking up the premium cuts to subsidize the rest.
The chops in this bundle are bone-in and cut thick enough to sear hard and finish gently. Cook them like a steak: cast iron on high, salt and pepper only, three to four minutes a side, rest before you slice. Heritage pork is happier at medium (one forty-five internal) than modern commercial pork, which is bred to be pushed further. Do not overcook these chops.
The ground pork works everywhere ground pork works: dumplings, ragu, larb, meatballs, breakfast hash, chili. It has a higher fat content than commercial ground pork by design, which is what gives real ragu its silkiness. If you find yourself draining fat off the pan, drain less than you think.
The bacon is our standard thick-cut hickory-smoked, one pound vacuum-sealed. Cook it slow in a cold pan on medium-low so the fat renders before the meat crisps. Save the rendered fat. Half the point of good bacon is what you cook in afterward.
The sausage patties are our own breakfast sausage: classic seasoning, real fat content, no fillers or water. Cook them in cast iron on medium-low, no added oil, four to five minutes a side.
Freezer space required: a chest cooler and a couple of ice packs will get it home. Then straight to a freezer set to zero degrees, where everything holds four to six months. Pickup is at the farm at 1701 Sampson Street, Conway PA 15027, scheduled by text after your order lands.

Do I need a chest freezer for this?
No. Six pounds of vacuum-sealed pork fits in the freezer compartment of a standard fridge with room to spare. The larger bundles benefit from more space.
