Our bees forage across 40 acres of pasture, hedgerow, and mixed woods in Conway, Pennsylvania. That mix is why the honey tastes the way it does: clover and wildflower from the fields, black locust and tulip poplar from the woods, plus whatever the bees decide is worth working in a given week. We keep the honey raw and unfiltered. Nothing is heated, nothing is fine-filtered, nothing is removed except beeswax cappings and hive debris. Raw honey crystallizes over time. That is real, unadulterated honey doing what real honey does. Warm the jar in a bowl of hot water and it goes back to liquid. Supply is seasonal and unpredictable. In a strong year we harvest twice, in a weak year we harvest once, and in a bad year we leave everything on the hive so the bees make it through winter. That is why we do not list a price or a stock count until jars are actually packed. When a batch is ready, we notify the farm list first. If any is left after that, it goes on the site. We do not ship honey even when we have plenty, because glass jars break in transit and the whole point is to hand you a jar we packed ourselves.
